The Difference Between Standard, Voice Isolation, and Wide Spectrum on Mic Mode

By the existence of this feature, you are able to change how foreground and background sounds are mixed or emphasized through the Control Center when you are playing or receiving calls in some apps including FaceTime, WhatsApp, Zoom and some more apps.
Here is the difference among Standard, Voice Isolation, and Wide Spectrum options on Mic Mode according to the Mac World site.
- Standard
If you choose this option, foreground and background sound is mixed like it would before this option came up. It emphasizes the foreground speaker without fully removing the background sound. - Voice Isolation
If you choose this option, background noise will be identified and reduced. It is the same as blurring the background in a Portrait photo taken in the Camera app, but it is in terms of audio. On the Apple Support page, it is explained that if you want your voice to be heard clearly in a FaceTime call and other sounds filtered out, Voice Isolation mode can be turned on because this mode prioritizes your voice in a FaceTime call and blocks out the ambient noise. - Wide Spectrum
If you choose this option, background sounds are mixed evenly with foreground so that it is useful if you want to share ambient sound, such as at an event or concert. According to the Apple Support page, you can choose this option, if you want your voice and all the sounds around you to be heard in a FaceTime call.
The Way to Turn Off the Sound
Do you want to turn off the sound when you are on a FaceTime call? If you want to turn off the sound when you are on a FaceTime call, you just have to tap the screen to open up the FaceTime controls and then you have to tap on the mic icon to turn the sound off. If you want to turn the sound back on, you just need to tap the button again.
For your information, as explained on the Apple Support site, if your sound is turned off, your mic will detect whether you are speaking, and you will be notified that your mic is muted and you are able to tap the mic icon to unmute it.
